Fall is finally here where I am in VA, well at least today feels like it :) Fall is definitely the season for soups! I love a good tomato soup but I decided to add some flavor to the mix and made a chicken tomato soup. Lets get started! These are the ingredients. Start by heating up a pot with olive oil. Sauté onions and garlic. Add a can of tomato sauce, diced tomatoes and basil. I'm excited because I used the tomatoes straight from my garden. By now your house should be smelling good! Next you are going to add veggie broth or chicken broth. Let it simmer for 10 mins and then blend it. You can use a blender or immersion blender like I did. Make sure to turn off the heat before using the immersion blender. Then add in salt and pepper. Season to liking. Now we are going to set this aside. Lets move on to the chicken. Heat up some olive oil and sauté onions then add chicken. I did season my chicken with salt, pepper, onion and garlic powder, and Mrs.Dash table blend. Let chicken cook until no longer pink then you are going to add in some chopped spinach. Let the spinach wilt and then add in that delicious tomato soup you just made. Go ahead and let this simmer for about 15 to 20 mins. Then we are going to add in some Greek yogurt. this step is optional but it adds a nice creaminess to the soup. Take the pot off the heat before adding the Greek yogurt. That's it you're all done! You can serve it with a grilled cheese sandwich. maybe some croutons or you can enjoy it as it is. I was the supermarket the other day and came across pomegranates and I have been wanting to incorporate different foods into my diet, so I picked one up. Sometimes I get tired of eating the same things for breakfast so my husband suggested I make some muffins. I had some leftover pumpkin puree from the pumpkin bread I made and thought this combo will go good together. Let's get started! These are some of the ingredients you will need. You will also need salt and a large egg. Feel free to you use whatever flour or milk you like or have on hand. You can also substitute the oil for unsweetened applesauce. Now I was being an overachiever and went ahead and juiced my pomegranate. I reserved some to put in the mix and on top of the muffin mix. If you can not find a whole pomegranate or you just don't feel like getting messy go ahead and purchase you a bottle and some seeds. You can also do without the seeds. Ok, so you may be thinking she didn't mix the dry ingredients first and then added in the wet. No and it came out PERFECT! Do whatever you like just as long as everything gets mixed in. I am not a baker and I just follow my own rules. Once everything is mixed pour it into you greased muffin pan or you can line it with cupcake foil. Bake it at 375 for 20 minutes or until done. Go ahead and drink it with some milk or if you're like me some tea. I hope you enjoy this recipe!
Ingredients: 1 cup almond flour(or whatever flour you choose) 1/2 cup brown sugar 2 teaspoons baking powder 1 teaspoon pumpkin pie spice 1/2 teaspoon salt 1/4 teaspoon baking soda 1 large egg, beaten 1/4 cup almond milk 1/4 cup canola oil 1 cup old-fashioned oats 3/4 cups pumpkin puree 1/4 cup pomegranate juice Instructions: Mix all dry ingredients then add in your wet ingredients Mix all together, you can add in some seeds Grease muffin tin Pour in mixture Top with some pomegranate seeds Bake at 375 for 20 minutes or until done Cowboy CaviarIngredients: 1 Can of black beans(drained and rinsed off) 3/4 cup of corn 1/2 cup of onion 1/2 cup of bell pepper(diced) 1 cup tomatoes(chopped) 1 avocado, chopped(optional) salt and pepper to taste cilantro(optional) Dressing: 1 tablespoon olive oil 1 tablespoon cider vinegar 1 tablespoon lemon juice 1/2 teaspoon Dijon mustard Mix all ingredients in a bowl. You can add avocado, I can eat avocado everyday all day 😋. You can also add in some cilantro. Cilantro goes well with all the ingredients pictured. Let it sit in the refrigerator for a couple of hours to marinate and then dig in. *you can also add onion and garlic powder* Now enjoy it with and tortilla chips or any crackers you like! You can also eat it with flat bread or add it to a wrap of choice. Spinach DipWho doesn't love a good dip? Especially when it has veggies in it, right? Well this spinach dip is a great snack that you can eat with carrots, cucumbers, or peppers. I also like to eat it with some crackers.
Ingredients: 10 ounce packaged frozen spinach(thawed, and squeezed) 1 cup of greek yogurt 2 tablespoons of mayo 1 carrot( diced) 2 chopped green onions 1/2 lemon, juiced 1 garlic clove, minced salt and pepper to taste onion powder(optional) Mix all ingredients in a bowl and refrigerate for at least 2 hours and get your dip on :) Stuffed chicken breast is a fav in my household. It is easy and simple to make and you can never go wrong with chicken, right? Lets get started with this simple and easy recipe! Go ahead and chop up your spinach, tomatoes and onions(I didn't have any onions :( so I had to do without) After that you are going to combine all your chopped veggies, feta cheese, and herb and garlic dressing( or you can you use whatever dressing you like) and you can even add some spices and greek yogurt if you do not have any dressing on hand. Next up you want to prep your chicken. I rinse mine with some vinegar or lemon juice. All this chicken needs is some good o'l seasoning. Let's get to stuffing! Start by making little cuts in your chicken breast and then just add the spinach mixture. Simple and easy, right? This is a quick but delicious recipe. Now stick it in the oven for about an hour or until the internal temperature reaches 165 degrees. You can also pan sear it and then continue to bake it to finish cooking it. They came out soooooo delicious! I didn't have any more broth in my pantry to make some risotto and I didn't want to use water so I used the liquid from the chicken to make me some risotto to go with it. I added 1/4 cup of cheddar cheese to the risotto. Ingredients:
Half a bag of spinach(chopped) 1/2 cup of cherry tomatoes 1/2 cup of onions 3 tablespoons of the herb and garlic dressing 1/4 cup of feta cheese 7 chicken breasts 1 tablespoon of paprika 1 tablespoon chicken seasoning( I used a blend that was giving to me and it was low in salt) salt and pepper to taste *adjust seasoning to liking Rinse off beans Mash beans with a fork. I like to leave some pieces chunky. Season 1 tsp of onion powder 1 tsp of garlic powder 1 tsp oregano salt and pepper to taste 1/4 cup diced onions and peppers( add as much or as little as you like) *adjust seasoning to liking* Add one egg 1/2 cup bread crumbs(adjust amount if needed) Form into patties.
Add olive oil to pan and cook on both sides for 7 to 10 minutes or until they are nice and brown. Spring is here and it's the perfect time to start making smoothies. I made this smoothie for breakfast this morning. Yummy! Ingredients
4 cups of frozen berries 1 cup kale or spinach 6 cups of milk of choice 2-3 tablespoons of chia seeds 1 ripe banana Blend it all together. makes 4-5 servings Spray pan with cooking spray then crack egg in the pan. Add salt and pepper to the egg in the pan. Cook egg to your liking. Top with avocado slices and salsa. Eat with a bowl of fruit and toast.
